Pumpkin Spice Latte

Ingredients
1/8 teaspoon sea salt
1 teaspoon natural vanilla extract
1 teaspoon minced ginger
1 1/4 teaspoons pumpkin pie spice (plus more to garnish)
1/4 cup pure maple syrup (plus more to taste)
1/3 cup unsweetened canned pumpkin
1/2 cup espresso
3 cups filtered water
1 cup raw, unsalted cashews
Step by step
To soak the cashews, either cover with filtered water for 2 hours or cover with boiling water for 10 minutes, drain, and discard the soaking liquid. Do not use the soaking liquid to make the drink.
Throw all of the ingredients into your KitchenAid® blender in the order listed. Secure the lid, and blend on high for 5 minutes until piping hot.
Alternatively, blend on high for about 60 seconds until smooth and creamy. Transfer the mixture to a small saucepan, and warm on medium-low heat for 2 to 3 minutes until hot.
